THE RIPENING PROCESS
Both which are being constantly monitored as to ensure every step in the process is being taken care of, and keeping the use of fertilizers to a minimum, and adding only small doses of pesticides to prevent plagues.

The person in charge of this process is our house oenologist, Oscar Delgado, who has been working at Barón Balché from the vineyard's very beginnings. To prevent any kind of grape disease Mr. Delgado cannot stress the importance of taking care of the vineyard enough; special attention must be provided to each vine-all through their growth cycle. As we aim for optimal vineyard upkeep, all natural procedures and products are preferred. Respecting carefully designed growing- standards, assure prime quality grapes as well as wine.
